Abstract: There are 13 vitamin compounds now considered essential for human health, but the total picture is much more complicated. The interactions of various nutrients, the body's metabolism, energy output, and the presence of disease all affect nutrient needs and utilization. A comprehensive view of vitamins, aimed at the consumer, covers history, Recommened Dietary Allowances, basic four food groups, product labeling, diet therapy, supplements, and nonvitamins. Each vitamin is described, giving its food sources, dietary requirements, functions, deficiency symptoms, possible toxicity and any controversies regarding its use. The minerals needed for good health are grouped by concentration in the body: macro-elements, such as calcium and chlorine; trace elements whose functions are known, such as iodine and iron; and trace elements of unknown use, such as aluminum and boron. Descriptions of commercially available vitamin and mineral supplements are given, though a balanced diet should provide all nutrients needed by a normal healthy person.
