About the author (2009)

Joanne L. Bradley has extensive culinary experience gathered over 30 years in the foodservice industry. Starting out as a professional chef for 16 years, she then changed tracks and dedicated her career to making a difference in the college and university food service sector. Diagnosed with gluten intolerance while a University Food Service Director, she has since concentrated on gluten free culinary education.
