This book is a delightful trip into bygone days. My how pampered we are in modern days and how our etiquette has gone by the way side. This book is just plain fun to read, somewhat like a history book. I did get a chuckleat the scanned words in the Table of Contents, like Pish rather than fish and Cookies ami 1 limbics rather than Cookies and Jumbles. (I have a copy of the actual 1901 cookbook).
The recipes are definitely "from scratch" and may contain terms with which we are not acquainted such as: bake in a slow or quick oven, measurements in coffee cups and tea cups, butter the size of nutmeg or a walnut, and 1/2 a gill of cold water, just to name a few.
The book includes sections on etiquette, health, menus, napkin folding, housekeeping, storage of fruits and vegetables, toilet (cleanliness), the laundry, and the "Miscellaneous" section at the back has too many topics to list, but is entertaining to read. Samples are: to clean soiled coat collars moisten with benzene and after an hour or so sponge with soap suds; to remove berry stains hold over burning sulphur; and you can even find instructions for cementing glassware and china.
Here is a sample recipe for cookies: Three eggs, 2 cups coffee sugar, 1 cup butter (do not melt the butter), 1/3 cup cold water, an even tea-spoon soda, 1/2 a nutmeg. These cookies will keep a year. This recipe like many of the recipes does not give baking instructions!
Sample from etiquette: "Should anything unpleasant chance to be found in the food, quietly remove it and say nothing, even though you may be unable to proceed with the meal."
I think the book is a hoot to read! I hope you do too.
