All I read was one recipe but that was enough to let me know this cookbook was just a little mixed up.
You have a dish called Greek Eggplant Lasagna. Actually I was looking for Pastichio. I imagine
with all the new vehicles that are hybrid I could be looking for a hybrid recipe. I think what they were trying to do was show a vegetarian recipe for Pastichio but unfortunately they did not really achieve much of anything.. The first thing that must be done is not use the word lasagna when talking about any Greek recipe that has macaroni in it. When you put the words Greek and Eggplant together you do not have Pastichio vegetarian or otherwise. In Greece when they make a dish with Eggplant and potatoes and other ingredients you would find in a Pastichio recipe what you have is Mousaka. I think it is high time that we stop using Italian names for Greek dishes, you just mess things up. You need to call it by it's correct name and then describe what is in it and how good it tastes. I get tired of Pastichio being called Greek Lasagna. Maybe we should should start calling their Lasagna Italian Pastichio. I think that is a great idea.
